Stackable No-Bread BLTs
These yummy “sandwiches” (minus the bread!) are an easy way to enjoy fresh tomatoes right in your dorm room.
Google the location of your local farmer’s market is and snap up some ripe, red tomatoes, crunchy lettuce and a good-for-you ripe avocado.
Microwaveable bacon is an easy way to add the salty taste that goes perfectly with this healthy version of a summertime favorite.
You’ll need:
- 4 tomatoes
- 2 slices Swiss cheese
- 4 cooked bacon strips
- 4 slices deli turkey
- 4 lettuce leaves (Bibb or Butter lettuce are good choices)
- 1/2 medium ripe avocado, peeled and cut into 8 slices–for this recipe, you may want to choose one on the firm side since you are going to slice it
- Cracked pepper (optional)
- Sea salt (optional)
Utensils:
- sharp knife
- cutting board
- microwave for cooking bacon
- microwave safe plate
- paper towels for soaking up bacon grease
Directions:
Wash and pat dry the lettuce.
Place the bacon on a microwave safe plate lined with paper towels. Cook according to bacon package directions Hint: set the microwave for the shortest amount of cooking time recommended. You can always add more time to make the bacon as crispy as you like. Break each piece in half.
Slice each piece of Swiss cheese into four pieces.
Peel and slice the avocado. Slice one half of the avocado into 8 slices. (Don’t know how? Go to collegeclassy.com/how-to-peel-and-slice-an-avocado for help.
Wash and dry the tomatoes. Cut four crosswise slices in each tomato, but don’t cut all the way through so the tomato is in one piece. Stuff each cut with a piece of bacon, a piece of cheese, a piece of turkey, a lettuce leaf and a slice of avocado. Add cracked pepper and sea salt as desired.
